For those of us who may not like the taste of Chapati all that much, a great option is to have Jaggery rice. Gud wale chawal or jaggery rice, as it is called, is on occasions a healthy and sweet alternative to get a reprieve from usual daily meals. 

But how to make jaggery rice? Here are the simple steps:

Step 1:

First things first, get a bowl and a vessel. Now that you have both the next immediate step in making jaggery rice is to take around 120 grams of jaggery (this can either be grated or be powdered or if not, then whole jaggery). 

Step 2:

Next step is to soak the same in around ¾ cup full of water for about 30 to 45 minutes. 

Don’t exceed. 

Should there be any impurities, what you need to do is to filter the jaggery syrup by way of using a fine mesh strainer. Then keep them aside.

You can take used natural jaggery powder for preparing jaggery rice. 

As an alternative, the whole jaggery can also be crumbled or chopped, but that process can be a little bit time consuming and strenuous.

The next set of steps in the preparing of jaggery rice is to keep the jaggery soiled in water. This is to ensure it dissolves fully. It won’t cause any mess. 

Step 3:

Next up you need to pick clean and then watch approximately ¾ cup rice around a couple of times in water. 

One can even make use of basmati rice or any variety of long grained rice.

Next up you need to then soak up the rice for a period of about 15 to 20 minutes in water. But be sure to drain all the water and set the rice aside. It’s not that complicated. 

Step 4:

At the same time, you need to roast 1 tablespoon of peanuts on a pan, should you want them to be infused in the rise.

If so, roast them till the time they are crunchy and you see some black spots on the skins.

Step 5:

Then we come to the pressure cooker for the jaggery rice. In a stovetop pressure cooker you need to add the soaked rice and around ¾ cup water. 

Now please ensure to cook for 2 around to 3 minutes on medium to what can be called medium-high heat. 

Step 6:

The next process then to make jaggery rice is to ensure that the pressure settles.

For when the pressure settles down on its own in the cooker, then only you have to open the cooker lid. By this time, one should ensure that the rice should be half cooked.

Step 7:

Now please add it to it the jaggery water that was prepared earlier at the start. 

However, that’s not all, you can also add around 1 to 1.5 tablespoons of any neutral flavour of oil that you may have. Maybe even use ghee should it at your disposal. 

The next course of steps are simple. You simply need to stir and gently mix  the jaggery water and oil or ghee, depending on what you have, with the half-cooked rice.

Step 8:

Next up is the time to add 15 to 20 raisins (kishmish) as they enhance the taste and appeal of the finished eatable. 

Now, add around 1 tablespoons of roasted peanuts. Some people also love more infusions of dried fruits. Please add according to your liking. 

Step 9:

What you now need to do as we come closer to preparing jaggery rice is to close the cooker with the lid and then pressure cook again for about  2 to 3 minutes. But do this on medium heat.

Step 10:

Now next when the pressure falls down, which it will, open the lid. 

The jaggery rice is ready to be served and eaten. Enjoy your meal.
